Ingredients

  • 1 medium tomato, thinly sliced
  • ¼ avocado
  • 1 tsp pepitas
  • 1 tsp sesame seeds
  • ½ lemon, juiced and zested
  • Cracked pepper
  • 2 slices seeded rye bread, or bread of choice (see note for GF)

Methods

  1. Toast bread to your liking.

    NOTE: Use gluten-free bread to make this recipe gluten free.

  2. Meanwhile, mash avocado with lemon juice and zest in a small bowl.
  3. Spread avocado mixture on toast, then top with tomato slices, pepitas and sesame seeds.
  4. Season with cracked pepper and serve. Enjoy!
