Ingredients

  • 125g unsalted butter, softened (see note for DF and VG)
  • ⅓ cup caster sugar
  • 1 tsp vanilla essence
  • ¾ cup self-raising flour
  • ⅔ cup plain flour
  • 1 tbsp milk (see note for DF and VG)
  • 1 tbsp passionfruit pulp

Methods

  1. Preheat oven to 160°C and line baking trays with baking paper.
  2. Using a mixer or hand whisk, cream the butter, sugar and vanilla essence.

    NOTE: Use dairy-free margarine and non-dairy milk to make this recipe dairy free and vegan.

  3. Sift in the flours and mix gently with a spatula until just combined. Add milk and passionfruit and mix until well combined.
  4. Roll dough into 20 small balls and evenly spread across baking trays, gently flattening with a flour-dusted fork. Bake for 15–18 minutes, or until slightly cracked on top.
  5. Cool on a wire rack before serving. Enjoy!
