Ingredients
- ¼ cup packed brown sugar
- ¼ cup white sugar
- ¾ cup unsweetened apple sauce or apple purée
- ½ cup oat flour (see note for GF)
- ½ cup self-raising flour (see note for GF)
- ½ tsp cinnamon
- 1 cup rolled oats (see note for GF)
- ¼ tsp coconut essence
Methods
- Preheat oven to 160°C and line baking trays with baking paper.
- Using a mixer or hand whisk cream the sugars, applesauce and coconut essence.
- Add oat flour, self-raising flour and cinnamon and mix well. Fold oats through.
NOTE: Use gluten-free oat flour, self-raising flour and rolled oats to make this recipe gluten free. You can also make your own oat flour by putting gluten-free rolled oats in a blender. - Roll dough into 20 small balls and evenly spread across baking trays. Bake for 12–15 minutes or until golden
- Cool on wire rack before serving. Enjoy!
