Ingredients

  • ¼ cup packed brown sugar
  • ¼ cup white sugar
  • ¾ cup unsweetened apple sauce or apple purée
  • ½ cup oat flour (see note for GF)
  • ½ cup self-raising flour (see note for GF)
  • ½ tsp cinnamon
  • 1 cup rolled oats (see note for GF)
  • ¼ tsp coconut essence

Methods

  1. Preheat oven to 160°C and line baking trays with baking paper.
  2. Using a mixer or hand whisk cream the sugars, applesauce and coconut essence.
  3. Add oat flour, self-raising flour and cinnamon and mix well. Fold oats through.

    NOTE: Use gluten-free oat flour, self-raising flour and rolled oats to make this recipe gluten free. You can also make your own oat flour by putting gluten-free rolled oats in a blender.

  4. Roll dough into 20 small balls and evenly spread across baking trays. Bake for 12–15 minutes or until golden
  5. Cool on wire rack before serving. Enjoy!
