Ingredients
- 2 cups oats (see note for GF)
- 2 cups puffed wheat (see note for GF)
- ½ cup raw almonds
- ½ cup raw pecans
- ½ cup raw cashews
- ½ cup pepitas
- 1 tsp cinnamon
- ½ cup olive oil
- ½ cup pure maple syrup
- 1 tsp vanilla essence
Methods
- Preheat oven to 180°C and line a large oven tray with baking paper.
- Mix all dry ingredients well, then stir through olive oil and maple syrup.
NOTE 1: Use gluten-free oats and gluten-free puffed rice to make this recipe gluten free. - Pour the mixture evenly onto the tray and bake in the oven for about 20 minutes, stirring halfway, until golden and crunchy.
- Once cooled, store in an air-tight container or jar.
- Serve ½ cup of granola with poached fruit or yoghurt. Enjoy!
