Ingredients

  • 2 cups oats (see note for GF)
  • 2 cups puffed wheat (see note for GF)
  • ½ cup raw almonds
  • ½ cup raw pecans
  • ½ cup raw cashews
  • ½ cup pepitas
  • 1 tsp cinnamon
  • ½ cup olive oil
  • ½ cup pure maple syrup
  • 1 tsp vanilla essence

Methods

  1. Preheat oven to 180°C and line a large oven tray with baking paper.
  2. Mix all dry ingredients well, then stir through olive oil and maple syrup.

    NOTE 1: Use gluten-free oats and gluten-free puffed rice to make this recipe gluten free.

  3. Pour the mixture evenly onto the tray and bake in the oven for about 20 minutes, stirring halfway, until golden and crunchy.
  4. Once cooled, store in an air-tight container or jar.
  5. Serve ½ cup of granola with poached fruit or yoghurt. Enjoy!

    NOTE 2: 1/2 cup per serve.
