Ingredients

  • 2 cups water
  • 1 cup uncooked brown rice
  • 1 cup milk
  • ¾ cup low-fat thickened cream
  • ¼ tsp vanilla essence
  • ⅓ cup caster sugar
  • ½ tsp cinnamon

Methods

  1. Bring water and brown rice to boil in a medium saucepan. Reduce heat to low, cover and simmer until rice is completely cooked and water has evaporated (approx 50 minutes).
  2. Stir through milk, cream, vanilla essence, caster sugar and cinnamon.
  3. Allow pudding to simmer uncovered for 20–30 minutes, stirring often.
  4. Spoon into bowls and serve. Enjoy!

    NOTE 1: Can serve 5-6.
