Ingredients
- 2 cups water
- 1 cup uncooked brown rice
- 1 cup milk
- ¾ cup low-fat thickened cream
- ¼ tsp vanilla essence
- ⅓ cup caster sugar
- ½ tsp cinnamon
Methods
- Bring water and brown rice to boil in a medium saucepan. Reduce heat to low, cover and simmer until rice is completely cooked and water has evaporated (approx 50 minutes).
- Stir through milk, cream, vanilla essence, caster sugar and cinnamon.
- Allow pudding to simmer uncovered for 20–30 minutes, stirring often.
- Spoon into bowls and serve. Enjoy!
