Ingredients

  • 2 medium apples, peeled and roughly chopped
  • 1 tsp vanilla essence
  • 1⁄2 cup apple juice
  • 11⁄2 cups water
  • 4 slices bread (see note 1 for GF)
  • 1 egg, lightly beaten
  • 50mL milk (see note 2 for DF)
  • 1/3 cup flour (see note 1 for GF)

 

Methods

  1. Bring juice, water and vanilla essence to the boil in a medium saucepan.
  2. Reduce heat to low and add apples. Gently simmer until soft, then strain and discard excess fluid.
  3. In a large bowl, whisk the egg, cinnamon and milk until smooth, then slowly add the flour and continue to whisk until smooth.

    NOTE 2: Use non-dairy milk to make this recipe dairy-free.
  4. Submerge the bread into the egg mix until completely coated, then gently lift out and let the excess drip off.

    NOTE 1: Use gluten-free bread and flour to make this recipe gluten-free.
  5. Cook bread in a large non-stick pan over medium heat until golden on each side. Serve with poached apples. Alternatively, you can serve with maple syrup or fresh berries. Enjoy!
