Ingredients

  • 1 medium apple, peeled and roughly chopped
  • 3 stalks rhubarb, chopped into 2cm pieces
  • ¼ cup caster sugar
  • 2 cups water
  • Yoghurt, to serve (see note for DF and VG)
  • Strawberries, to serve

Methods

  1. Bring water, apples, rhubarb and sugar to the boil in a medium saucepan. Reduce heat to low and gently simmer, stirring, until soft.
  2. Strain mixture and place into fridge until cool.
  3. Using a tall glass, layer rhubarb and apple mixture with yoghurt. Top with chopped strawberries and serve. Enjoy!

    NOTE: Use non-dairy yoghurt to make this recipe dairy free or vegan.
